Quick Quiche

Using wholemeal bread in place of pastry, this quiche recipe is quick, healthy and fool-proof!


  • Olive or canola oil spray 
  • 4 slices, stale or lightly toasted wholemeal bread 
  • 250g frozen spinach 
  • 1 onion, thinly sliced 
  • 1 cup sliced mushrooms 
  • 6 eggs 
  • 1 ½ cups low-fat milk 
  • 1 cup grated low-fat cheese 
  • 1 tsp paprika 
  • Pepper, to taste


  1. Preheat oven to 200°C (180°C fan forced) and spray baking dish with oil 
  2. Cut bread into halves then flatten and line the base of the dish 
  3. Microwave spinach for 2 minutes or until defrosted 
  4. Sauté mushroom and onions until softened 
  5. Top bread with spinach, mushrooms and onions 
  6. Beat the eggs, milk, paprika and pepper. Then pour mixture over bread and vegetables 
  7. Sprinkle with cheese 
  8. Bake for 30-35 minutes or until cooked through 
  9. Serve warm 
    Variation: Substitute vegetables as you please. Courgette, corn or capsicum work well.
