Using wholemeal bread in place of pastry, this quiche recipe is quick, healthy and fool-proof!

Ingredients
- Olive or canola oil spray
- 4 slices, stale or lightly toasted wholemeal bread
- 250g frozen spinach
- 1 onion, thinly sliced
- 1 cup sliced mushrooms
- 6 eggs
- 1 ½ cups low-fat milk
- 1 cup grated low-fat cheese
- 1 tsp paprika
- Pepper, to taste
Method
- Preheat oven to 200°C (180°C fan forced) and spray baking dish with oil
- Cut bread into halves then flatten and line the base of the dish
- Microwave spinach for 2 minutes or until defrosted
- Sauté mushroom and onions until softened
- Top bread with spinach, mushrooms and onions
- Beat the eggs, milk, paprika and pepper. Then pour mixture over bread and vegetables
- Sprinkle with cheese
- Bake for 30-35 minutes or until cooked through
- Serve warm
Variation: Substitute vegetables as you please. Courgette, corn or capsicum work well.
